  1. tofu always works for me. just thought I’d say hi Stephen, it’s been awhile. lots of interesting things going on in my life. I guess I have to consider what the alternatives might be. and back on the topic of tofu, a loose recipe:

    take good oil, such as grapeseed (yes, that was right what I just typed) or mild olive, and heat up quite high, preferably in a wok. carefully add (as the oil will be very very hot) large swaths of lemon zest and whole crushed garlic, frying until lightly browned — removed lemon and garlic immediately. again being very careful, add cubed firm tofu, in batches as not to crowd the cooking vessel. fry ’til just beginning to brown, remove and spread out on plate/platter covered with paper towel. into the still hot oil, add some chopped onion, let fry up until slightly translucent, then add one chopped juicy tomato (roma, etc.). after the tomato has softened a bit, add the tofu. cook a minute or two, then add soy sauce for color/taste, and juice of about half a small lemon. add ketchup to taste and to form sauce w/ other liquids. serve over steaming rice.
